Potatoes offer a diversity of nutrients, even though the United States Potato Board clearly defines them as complex carbohydrates. For instance, a medium-sized potato counts as a cup of starchy vegetables, although it also provides several vitamins and minerals. According to Recipetips.com, 20 percent of the starch in potatoes is indigestible and requires cooking before consumption. There can, however, be some resistant starch that goes through your bowel undigested. This resistant starch essentially works like fiber to maintain bowel health, says Agriculture and Agri-Food Canada.
