What is glucose syrup definition ?
Glucose syrup definition is the purified and concentrated aqueous solution of nutritive saccharides derived from edible starch and having a dextrose equivalent (DE) of 20 and more.
Glucose syrup have the following characteristics :
1. Dry matter not less than 70%.
2. Dextrose equivalent (DE) , expressed as d-glucose , of not less than 20% base on dry matter.
3. Sulphated ash content of not more than 1% on a dry basis .
In the glucose industry , the word ' glucose ' is take to mean syrup , whilst the word " dextrose ' is taken to mean the white crystalline soild ' dextrose monohydrate.
Glucose syrup, also known as confectioner's glucose, is a syrup made from the hydrolysis of starch .Because the glucose syrup is mainly processed from corn(maize) starch , so the glucose syrup is also know as corn syrup .But the glucose syrup is also can process from potato starch , cassava starch , sweet potato starch, wheat starch and other kind edible starch .
