Wheat gluten, also called seitan,wheat meat or simply gluten is the main protein of wheat.It is made by washing wheat flour dough with water until all the starch granules have been removed,leaving the sticky insoluble gluten as an elastic mass.
How to make wheat gluten from gluten washing machine ?
Making gluten from wheat flour by gluten making machine process is as below :
1.The wheat flour and water are mixed together to make the dough.
2.The resulting dough is left to rest for about 30 minutes to allow the protein components to absorb the water.
3.Add more fresh water to washing the dough in gluten washing machine which knead the dough until all the starch is suspended in the wash water.
4.Discharge the starch water .
5.Repeat step 2 & step 3 for 4~5 times until all the starch have been removed by washing method.
6.All that remains in the gluten washing machine is the wheat gluten.
Wheat gluten is an alternative to soybean-based foods such as tofu, which are sometimes used as meat substitutes. Some types of wheat gluten have a chewy or stringy texture that resembles meat more than other substitutes. Wheat gluten is often used instead of meat in Asian, vegetarian, Buddhist, and macrobiotic cuisines. Mock duck is a common use for wheat gluten.
On another way,the wheat gluten is also used for a protein source and binding ingredient in pet foods.
